dc.description.abstractEn la presente investigación se elaboró un estudio de prefactibilidad para la instalación de una planta procesadora de café (coffea arábica) tostado y molido en sacos filtrantes. Ante un consumo de café cada vez mayor en Perú, el café se puede dividir en dos grandes grupos, el café instantáneo y el café molido. El café instantáneo, como su nombre lo indica, es muy práctico y sencillo de preparar, sin embargo el sabor y aroma no son tan agradables como los del café molido, el cual, al mismo tiempo, requiere una preparación más elaborada y requiere de cafeteras, prensas, entre otros para su preparación. Frente a esta situación, Café Kallpa presenta el café arábica tostado y molido en sacos filtrantes, producto que asegura un buen sabor y aroma, y, al mismo tiempo, facilidad de preparación así como de transporte. Al comienzo del proyecto, se definió el producto y sus usos, así como los bienes que serían sustitutos y complementarios. Posteriormente, se determinó que el mercado objetivo será Lima Metropolitana y el público objetivo serán los adultos jóvenes, es decir personas que se encuentran entre 21 y 35 años. Luego de realizar una investigación de mercado, se determinó que se tendrá una demanda de 57 330 estuches y 66 168 estuches en el primer y último año del proyecto respectivamente. Cada estuche contiene 20 sobre envoltorios de 5 gramos de café arábica tostado y molido en sacos filtrantes. Respecto la localización de la planta procesadora, primero se utilizó el método de ranking de factores para determinar la macro localización donde se eligió el departamento de Lima. Por otro lado, para la micro localización, utilizando el mismo método de análisis, se determinó que la mejor opción fue el distrito de Chilca. El proceso productivo, donde la gran mayoría de máquinas son semi automáticas, consta de 10 actividades y requiere de dos operarios. El cuello de botella definió una capacidad de producción máxima de 139 230 estuches por año. Considerando la gran importancia del control de calidad del producto y la seguridad y salud ocupacional de los colaboradores, se analizaron los puntos críticos de control de calidad y se identificaron los peligros y riesgos asociados al proceso de producción respectivamente. Además, se utilizó el método de análisis relacional para el diseño de planta donde, considerando el Reglamento Nacional de Edificaciones, se estableció un área total de 508, 41 m2. Para el correcto funcionamiento de las actividades administrativas y operativas de la empresa, se requiere un total de 9 colaboradores. Finalmente se evaluaron los aspectos económicos, financieros y sociales del proyecto, donde se concluye que se requiere de una inversión de S/ 847 978,29 la cual el 80% será cubierto con una deuda y el resto de los accionistas. Además, se obtuvo un VAN económico y financiero de S/ 289 654,90 y S/ 307 924,55 respectivamente y una TIR económica y financiera de 21,43% y 24,14% respectivamente, ambos mayores al costo de capital. Respecto al aspecto social del proyecto, luego de evaluar los indicadores de valor agregado, empleabilidad y rendimiento de capital, se concluyó que el proyecto genera un impacto favorable a la sociedad.es_PE
dc.description.abstractIn the present investigation, a prefeasibility study was carried out for the installation of a roasted and ground coffee (coffea arábica) in filter bags processing factory. Faced with an increasing coffee consumption in Perú, coffee can be divided into two main groups, instant coffee and ground coffee. Instant coffee, as its name implies, is very practical and easy to prepare, however the flavor and aroma are not as pleasant as a ground coffee, which, at the same time, requires a more elaborate preparation and use of different types of coffee machines. Faced with this situation, Café Kallpa presents a roasted and ground Arabic coffee in filter bags, a product that ensures a good flavor, aroma, and at the same time, ease of preparation as well as transport. At the beginning of the project, the product and its uses were defined, as well as the goods that would be substitutes and complementary. Subsequently, it was determined that the target market will be Lima Metropolitan and the target audience will be young adults, that is, people who are between 21 and 35 years old. After conducting a market investigation, it was determined that there will be a demand for 57 326 boxes and 66 165 boxes in the first and last year of the project respectively. Each box contains 20 filter bags with 5 grams of roasted and ground Arabic coffee. Regarding the location of the processing factory, a ranking method was first used to determine the macro location where the department of Lima was chosen. On the other hand, for the micro location, using the same analysis method, it was determined that the best option was Chilca district. The bottleneck activity defined a maximum production capacity of 139 230 boxes per year. Each box contains 20 sachets of 5 grams of roasted and ground Arabic coffee. Considering the great importance of product quality control and the occupational safety and health of the collaborators, the critical points of quality control were analyzed and the hazards and risks associated with the production process were identified, respectively. In addition, the relational analysis method was used for the factory design where, considering the National Building Regulations, a total area of 508, 41 m2 was established. For the proper functioning of the administrative and operational activities of the company, a total of 9 collaborators are required. Finally, the economic, financial and social aspects of the project were evaluated, where it is concluded that it requires an investment of S/ 847 978,29 which 80% will be covered with a debt and the rest with the shareholders. In addition, an economic and financial NPV of S/ 289 654,90 and S/ 307 924,55 respectively and an economic and financial IRR of 21,43% and 24,14% respectively, both higher than the cost of capital. Regarding the social aspect of the project, after evaluating the indicators of added value, employability and capital return, it was concluded that the project generates a favorable impact on society.en_EN
