Estudio de prefactibilidad para la instalación de una planta productora de papa huayro (Solanum tuberosum) precocida congelada

Abstract

La finalidad de este estudio es evaluar y determinar la viabilidad comercial, tecnológica, medioambiental, económica, financiera y social para la instalación de una planta producto de papa huayro precocida congelada en el Perú. La idea de este producto es brindar a las personas una papa precocida casi lista para consumir que les permita reducir el tiempo de cocción que se emplea regularmente cuando se utiliza la papa huayro en algún plato. Para esta investigación, se elaboró un estudio de mercado en los niveles socioeconómicos A y B de Lima Metropolitana, en los que obtuvo como resultado una demanda de 1.189.113 kilogramos de papa huayro precocida congelada en el último año del proyecto. Una vez calculada la demanda, se realizó el análisis para establecer la localización de la planta, dando como resultados en la macrolocalización Lima, y en la microlocalización el distrito de Lurín, con un área total del terreno de 1.005 m2. Para la parte financiera del proyecto, se obtuvo que la inversión final necesaria sería de S/ 3.952.651, la cual contará con 50% de capital propio y 50% de financiamiento a través de una entidad bancaria. Los indicadores arrojaron los resultados del VAN y TIR económico de S/ 1.270.721 y 26% respectivamente. Por otro lado, los resultados del VAN y TIR financieros indicaron S/ 1.296.084 y 36% respectivamente. Como ambos indicadores fueron mayores que el costo de oportunidad y son montos positivos se puede afirmar que es un proyecto rentable. Finalmente, se pudo concluir que el proyecto es mención es viable comercial, operativa, tecnológica, económica, financiera y socialmente.

The purpose of this study is to evaluate and determine the commercial, technological, environmental, economic, financial, and social feasibility of installing a frozen precooked huayro potato product plant in Peru. The idea of this product is to provide people with an almost ready-to-eat precooked potato that allows them to reduce the cooking time that is regularly used when using the huayro potato in a dish. For this research, a market study was carried out in socioeconomic levels A and B of Metropolitan Lima, which resulted in a demand of 1.189.113 kilograms of frozen precooked huayro potato in the last year of the project. Once the demand was calculated, an analysis was made to establish the location of the plant, resulting in the macro-location of Lima and the micro-location of the district of Lurin, with a total land area of 1.005 m2. For the financial part of the project, the final investment required would be S/ 3.952.651, which will be 50% equity and 50% financing through a bank. The indicators yielded NPV and economic IRR results of S/ 1.270.721 and 26%, respectively. On the other hand, the results of the financial NPV and IRR indicated S/ 1.296.084 and 36% respectively. Since both indicators were higher than the opportunity cost and are positive amounts, it can be affirmed that the project is profitable. Finally, it was concluded that the project is commercially, operationally, technologically, economically, financially and socially viable.
