Estudio de prefactibilidad para la instalación de una planta productora de queso vegetal a base de anacardo (Anacardium occidentale)

Abstract

En el presente proyecto se estudiará y evaluará la viabilidad de la implementación de una planta productora de queso vegetal a base de anacardo. En el primer capítulo se planteará la problemática sobre la mala alimentación y la tendencia a nuevos estilos de vida saludables, siendo el producto VeggieCheese destacado por su gran aporte nutricional debido al aporte de la materia prima. Se realizó el estudio de mercado donde se segmento la población identificando a los posibles compradores del producto mencionado. Se llegó a obtener como resultado una demanda de 92,190 unidades en el primer año. Por otro lado, para la macrolocalización se obtuvo como mejor ubicación para la implantación de la planta en la ciudad de Lima, mientras que por el lado de microlocalización se optó por el distrito de Lurín. Se llevó a cabo un estudio y aprendizajes previos para poder realizar la ingeniería del proyecto donde además de mencionar la definición técnica del producto, se efectúa el proceso de producción y la disposición de planta. Pasando a los presupuestos y evaluación del proyecto se estableció que sería necesaria una inversión total de S/. 344 540 para la puesta en marcha, donde después de realizar evaluaciones tanto económicas como financieras con un COK de 16,24%, se obtuvo indicadores económicos tales como: VAN = 330 891, B/C = 1,96, TIR = 42,40%, Periodo de recuperación = 3,32 años; e indicadores financieros como: 286 749, B/C = 2,66 , TIR = 51,57%, Periodo de recuperación = 3,19 años. Con el análisis de los indicadores mostrados se puede llegar a la conclusión que el proyecto es viable.

In the present project, the feasibility of the implementation of a plant that produces vegetable cheese based on cashew nuts will be studied and evaluated.
