Estudio de prefactibilidad para la instalación de una planta productora de cerveza artesanal de arándano y cebada

Abstract

El presente estudio realiza una evaluación de la viabilidad del proyecto asociado a la elaboración de una planta productora de cerveza artesanal basada en arándano y cebada. Se analizó la problemática actual, teniéndose que las cervezas artesanales en el Perú es un mercado más reducido y así poder contribuir al consumo de recursos peruanos aprovechando el buen momento productivo que atraviesa el arándano. Aunado a esto, se determinó que la demanda para el año 2023 estuvo por el orden de los 109 207 litros y para el último año es de 128 333 litros de cerveza; dicha demanda se calculó en base a la encuesta realizada y el crecimiento poblacional. El precio de venta de cada cerveza será de S/ 8 más IGV. El área geográfica del estudio correspondió a la provincia de Huaraz en el departamento de Ancash, para lo cual se recurrió al empleo del método ranking de factores con la intención de realizar un análisis del sector industrial y una evaluación mediante el modelo Canvas, para determinar los asociados claves, recursos, entre otros. El tamaño de planta es de 128 333 litros, que en esta oportunidad fue establecido por el mercado. Se analizó las especificaciones técnicas del producto, determinando que es una cerveza pale, en base a ello se realizó la determinación de la maquinaria a utilizar, la capacidad en base a esta maquinaria y a la estimación de la capacidad instalada. En última instancia, se realizó la distribución de planta, detallando el cálculo de las áreas y de la localización de las mismas dentro de la planta, elaborando el layout correspondiente. Se concluye que el proyecto es viable con una inversión de S/ 1 070 805 la cual es financiada en un 17% por el BBVA generando un VAN de S/ 1 022 640 y un TIR de 37% en la evaluación económica y un VANF de S/ 1 019 655 con un TIR de 40% en la evaluación financiera.

The present study carries out an evaluation of the feasibility of the project associated with the elaboration of a craft beer production plant based on blueberry and barley. The current problem was analyzed, considering that craft beers in Peru is a smaller market and thus be able to contribute to the consumption of Peruvian resources, taking advantage of the good productive moment that blueberries are going through. In addition to this, it was determined that the demand for the year 2023 was in the order of 109 207 liters and for the last year it is 128 333 liters of beer; Said demand was calculated based on the survey carried out and population growth. The sale price of each beer will be S/ 8 plus IGV. The geographical area of the study corresponded to the province of Huaraz in the department of Ancash, for which the use of the factor ranking method was used with the intention of carrying out an analysis of the industrial sector and an evaluation through the Canvas model, to determine the key associates, resources, among others. The plant size is 128 333 liters, which on this occasion was established by the market. The technical specifications of the product were analyzed, determining that it is a pale beer, based on this, the determination of the machinery to be used, the capacity based on this machinery and the estimate of the installed capacity were made. Ultimately, the plant distribution was made, detailing the calculation of the areas and their location within the plant, preparing the corresponding layout. It is concluded that the project is viable with an investment of S/ 1 070 805 which is 17% financed by BBVA, generating a NPV of S/ 1 022 640 and an IRR of 37% in the economic evaluation and a VANF of S/ 1 019 655 with an IRR of 40% in the financial evaluation.
