| dc.description.abstract | The food industry is one of the most important around the world, and within this sector, the part dedicated to the production of fruits in their various forms can be highlighted. In the B2B environment, there is usually a higher level of demand regarding requirements, so it has been a fundamental issue to focus more on the processes that tend to generate defective products and, therefore, merchandise that could be rejected. Accordingly, a model has been proposed that can be useful for the previously stated problem, which consists of using three Lean Manufacturing tools: Jidoka, Standardized Work, and TPM, with the objective of reducing the percentage of rejected products, which was achieved thanks to the application of the proposed model, allowing the reduction from 16.27% to 7.61%. | en_EN |
| dc.description.abstract | La industria de alimentos es una de las más importantes alrededor del mundo y dentro de este sector se puede destacar aquella parte que se dedica a la producción de frutas en sus distintas presentaciones. En el entorno B2B, se suele tener un mayor nivel de exigencia respecto a sus requerimientos, por ello, ha sido un tema fundamental tener un mayor enfoque en los procesos que tienden a generar productos defectuosos y, por ende, mercadería que podría ser rechazada. De acuerdo con lo anterior, se ha propuesto un modelo que pueda ser útil para la problemática previamente planteada, el cual consiste en el uso de 3 herramientas Lean Manufacturing: Jidoka, Trabajo Estandarizado y TPM, con el objetivo de reducir el porcentaje de productos rechazados, que se logró gracias a la aplicación del modelo propuesto, lo cual permitió reducir del 16,27% a un valor del 7,61%. | es_PE |
