Pan con reducido contenido de calorías
Abstract
Hoy en día la industria de la panificación utiliza fibra en la producción de panes por dos razones: reducción de calorías y enriquecimiento con fibra. El panificador, por un lado, está tratando de reducir el contenido calórico del pan mediante el aumento de celulosa no digerible de elevada absorción de agua, y, por otro, está tratando de tomar ventaja del conocimiento del consumidor respecto de las recomendaciones científicas relacionadas con la salud y los hábitos de consumo.
